Buckwheat rejuvelac

For spee rejuvelac made from buckwheat is the easiest and least time consuming as this grain sprouts very quickly. If you do not have buckwheat then you may substitute it with any other whole grain such as: whole wheat berries, brown rice, quinoa and so on. You can make rejuvelac at home from various grains. This demo uses buckwheat groats which are widely available and have a very short soaking time. If using wheat berries or other grains, observe the note about longer soaking time.

I am not aware of any commercial brands of rejuvelac. It is slightly fizzy drink with grainy and citrusy flavor. Originally it was made with wheat, but you can experiment with barley, rye, buckwheat , millet or quinoa. Start with one cup soft wheat berries (pictured). Buckwheat is a healthy side dish containing all of the essential amino acids. Serve hot with a small piece of butter on top. Oats and buckwheat are worth doing, but brown rice is more trouble than it is worth IMHO. Just dump a bunch of (brown) rice into your jar and proceed to brew rejuvelac skipping the sprouting. I often do rice rejuvelac (actually have rice going all this month) and it is good. It is one of the easier and least expensive foods to ferment.
